Tarana Husain Khan interviews Nawab Kazim Ali Khan about the forgotten foods of Rampur, India
Nawab Kazim Ali Khan, popularly known as Naved Mian, is the grandson of the last nawab of Rampur, Raza Ali Khan. In this interview, recorded at the dastarkhwan (dining table) of the Noor Mahal Palace, he talks about the special dishes that adorned the tables of the erstwhile nawabs of Rampur. Nawed Mian is accompanied here by his chef khansama Mehfooz Qureshi who not only prepared all the delicacies being discussed but also remembers the rare recipes he learnt from the nawab’s family. This interview is part of the documentary Dastarkhwan-e Rampur (A Feast in Rampur) tracing the cultural history of north India’s Rampur town through its food and culinary heritage.
